Nothing Beets Summer

Well…my mom says no to finger foods for the Open House.  Things could be worse however.  I tested by Baba Ganoush recipe and as it turns out it is delicious.  I also had my first canning experience with some hot pepper jelly.  I got the hot peppers from the Farmers Market and the recipe from the Quad City Times (Food & classifieds on 8.19).  Plus I made this great beet salad with all locals and organic oranges:

8 small beets (boiled or baked, skinned, and chopped)
1 very large cucumber or a couple small (skinned to look pretty and sliced)
2 1/2 oranges (sectioned and cut into thirds)
1 red onion
feta cheese

Juice from half an orange
2 Tbps red wine vinegar (or enough to make the dressing equal 1/2 cup)
1 Tbps dill weed

Just mix and enjoy! I prefer to top with the feta instead of mixing it in because it tends to kind of dissolve.
